Chocolate Vanilla Raspberry Dream Cake

Today we want to share our divine Chocolate Vanilla Raspberry Dream Cake with you. We think this is the absolute best raw cake we have ever enjoyed. Honestly, it has everything you need in a perfect cake. A crunchy crust followed with a perfect rich chocolate layer, topped with a smooth sweet tickling vanilla spread. To give our Dream Cake the perfect combination of sensations in your mouth it is finally topped with a nice refreshing raspberry cream. This cake is pure pleasure for all your senses. Not to mention that the chocolate filling alone blows your mind.dream cake 4

INGREDIENTS

Crust
– 1 cup buckwheat flakes (change to nuts if you prefer)
– 8 dates

Chocolate Dream
– 2 cups cashew nuts (soaked)
– 2 bananas (more if desired)
– 8 dates
– 3 big tbl coconut oil
– 1/2-1 cup raw cacao
– 4 tbl agave syryp (or other sweetener)
– 1 tbl vanilla / 1 vanilla pod

Vanilla Spread
– 1 1/2 cups of cashews
– 1/4 cup of water
– 3 tbl coconut oil
– 2 tbl agave syryp
– 1 tbl of vanilla / 1 vanilla bean
– a pinch of salt

Raspberry Cream
– 1 banana
– 1 cup frozen raspberries
– 1 lime

Decoration
– Homemade peanut butter (optional)
– Raw cacao nibs

Start with making the crust by putting the ingredients in your food processor. Let ig go until you get a nice and crunchy texture. Divide it into your form. Put it in the fridge meanwhile you prepare the rest of the cake.

Now make the Chocolate Dream and put all the ingredients in your mixer. Blend until you get a nice and creamy texture. The more raw cacao you put in the more epic it will be. Cover the crust with your delicious Chocolate Dream paste. Put it in the freezer meanwhile you prepare next layers. Let it rest for at least 30 minutes before spreading next layer on it.

To make your Vanilla Spread simply put all the ingredients except water in your washed mixer. Add as little water as needed to make it smooth. Put it in a bowl and place it in your fridge.

You can make this cake in two ways. Either you want your Raspberry Cream liquid and prepare it when it is time to serve the cake or you make the Raspberry Cream now and add it to the cake and let the cake rest in the freezer unti it is time to serve.

Take out your Chocolate Dream and if decorate it with the peanut butter (optional). Cover the chocolate layer with Vanilla Spread.

Now make your Raspberry Cream by mixing the ingredients in your clean mixer. Spread it carefully over your cake.

Either you eat it directly or put it in your freezer and serve it later. Make sure to take it out a good while before eating, around 20-30 min.  dream cake 2Buon appetito! Hope you enjoy it as much as we did 🙂

Raw Brownie Heaven

The other day we went to a crystal shop and bought a couple of new stones to our collection. Oh dear, how strong are they not! We have honestly felt a bit strange these last days. Many emotions flowing through us and we need some time to find our way through it all. We know we should never fight any emotions. Never try to ignore them. It might be easier to distract ourselves and go on in our lives finding pleasure from external satisfaction. In the end, we all know that is not the way to go. We need to take our time to remove old blockages and set ourselves free and to be able to see clearly. It can hurt quite some but it will be worth it, eventhough it might not feel like that at the moment! 😉 You dear friend, do you have any thoughts? So the first recipe out today is a super yummie creation from our beautiful friend Ragnhild. We made her Heavenly Fudgy Raw Vegan Brownie and seriously it was beyond this world. DELICIOUS! Please have a look at her site for more amazing recipes and lovely blog. She has written the recipe in Norwegian so we have translated it into English.

Fudgy Raw Brownies (hellooo Choco Heaven)

INGREDIENTS
– 250 g firm raw almond butter
– 2 tbl coconut oil
– 4 tbl agave syryp (or any other sweetener works probably perfectly)
– a pinch of pink Himalaya salt
– Sprinkle vanilla
– 4 big tbl raw cacao
– 2 handful of chopped macadamia nuts or hazel nuts (we used hazel nuts)

Put all the ingredients in a big bowl and mix it well. Place it on a form and put it in the freezer. Keep it in the freezer until it is time to serve.

Seriously. Beyond delicious! Our pics donnot make it fair so it is definitely worth a try. We actually made a new version right now! 😉 So give it a go! Here is the link to Ragnhild´s recipe.

We also made a delicious Vanilla Spread that we covered our brownies and some other cakes with. It works perfectly as a normal dip for your fruits if you want to make it more sweet and serve as a dessert.

Vanilla Dip

INGREDIENTS
– 1 1/2 cups of cashews
– 1/4 cup of water
– 3 tbl coconut oil
– 2 tbl agave syryp
– 1 tbl of vanilla / 1 vanilla bean
– a pinch of salt

Put all the ingredients except water in your blender. Start mixing it and add as little water as needed until it gets smooth enough. Voilá you have the perfect Vanilla Dip. Spread it over your cake or dip your fruit in it!

Homemade Peanut Butter

We hope you having a good Friday and keep the good vibes going. The weekend is about to begin. Do you have any plans for the weekend? We have an awesome wicked excited weekend ahead of us. It is Julie´s birthday on Sunday and we will have some friends over tomorrow evening for a rawesome aperitivo. So now we are in the preparation for goodies we will serve our beloved friends. We are having so much fun in the kitchen at the moment and want to share our homemade peanut butter we just prepared with you.  It is super easy to make and you know exactly what it contains. It is not often we make our own nut butters but seriously peanut butter is sooooo good! We also have to note that this is not a raw peanut butter version because we could not find any raw peanuts to use.

jordnöt1Here is how to make your Homemade Peanut Butter:

INGREDIENTS
– 1 cup peanuts

Place all the desired peanuts in your food processor or blender. Process it until it turns into a butter like consistency. This make take some time. At first the peanuts turn flour like. Therafter it starts to be more set and eventually turns into the creamy butter. During the blending you might have to scrape down the sides of your blender/food processor because the peanut rests tend to get stuck there. Also be careful so you donnot burn the engine of your blender/food processor. Our suggestion is to be patient and prepare yourself for a peanut butter euforia.

jordnöt2We had a litte afternoon snack with the peanut butter and stuffed some dates. We enjoyed them with a cup of tea each and big smiles on our faces. At last we want to share our happy song we are dancing along with in the kitchen and we wish you a wonderful Friday!

What a beautiful sunny weekend Amsterdam has given us. We appreciate it with our full hearts and have tried to spend as much time as possible outside. Re-charging our Vitamin D levels in our bodies! 😉 We are so happy to hear some of you want to join us on May Meditation MonthRemember that it is never too late to start. There is always time to start to meditate and connect with our inner selves. If you have started practicing, how is it going? If you have any thoughts, ideas, tricks or anything you want to share with us and our friends. Please do so! We have so far meditated every day. Some days for 5-10 min but this morning we started the day with 20 min. Oooh, such a nice feeling! We are still in the beginning of our meditation practice and very so often our thoughts wander away. Therefore, it is even more important to keep practicing. Hopefully within a short time we will be able to quite our minds more and more. In a couple of days we will write a longer post about our thoughts about this. We will also link some guided meditation videos that we have found to be useful! But until then.. keep practicing 😉

Yesterday we met up with a close friend out in Vondelpark in Amsterdam. Perfect weather to enjoy some nice white wine in the sun! Later on we went to the vegetarian (and vegan friendly) restaurnat Golden Temple and enjoyed a Raw Vegan delicious salad. Perfect Raw Crackers made out of different seeds, sun dried tomatoes and herbs. Something we have to try to make ourselves! Later in the evening we craved some dessert so we made a massive portion of Raw Vegan Ice cream. So delicious and super easy to make. This time we made three different flavours; blueberry, raspberries and carob! Have a look at the ingredients if you want to make some vibrant and healthy ice cream to yourself, your family and friends. 🙂

Raw Vegan Healthy Ice Cream

How are you today? Did you have a nice weekend? We have our deadline coming up on Tuesday so we have quite some work to do but it is all fun and exciting. We try to stay focused in this very moment and keep our visualizations on where we are heading BUT in the same time realize deep within us that we are already (t)here. Time is an illusion. In the end it is the journey that matters. Find joy in everything regardless what you are doing. We promise with our full hearts your life will for ever be transformed as soon you manage to tip the energy. For example, we have become friends with the guys selling fruits, veggies and nuts in our local little shop. Every time we visit we make jokes, laugh and co-create together. It is an every day routine that has transformed to one of the highlights during the day. Embrace every moment. Enjoy your breath. Enjoy your legs that take you further on your life journey. Every single person has a purpose and deep within all of us there is a good heart. That is our natural state of being. We are all a part of this universe. We come from the same source. What we easily can see in the world (if we put our intentions to it) are many disconnected fellow beings with egos taking up their whole beings. They might make it difficult for us to see their true innerselves. Their good hearts. But keep Deepak Chopra words in your mind, every single one truly does the best from their own knowing. Be the light. Spread your love. Their mother ran near the well and started barking, and attracted the attention of the owner, who looked inside and to his surprise there was a king cobra at the bottom, which didn’t pose any threat to the puppies. Moreover, the reptile, looked after the puppies, by not allowing them to cross to the other side, where they could possibly drown, when the well is filled with water.

In general, they spent around 48 hours together at the bottom and in these 48 hours the cobra sat quietly next to them. When help finally arrived from the forest department, the cobra slithered to the other end of the well. The puppies were not injured at all and the reptile was immediately taken into the woods and was released into the wild.

Even the most deadly and dangerous creatures on earth know what Co-existence and mutual assistance is. The human race is in this respect far behind, and this is our biggest drawback.”

The best part is that you can be as creative you wish to be and make all kind of variations. Clean and healthy ice cream is truly one of the best discovery we have made when making the transition to a Raw Vegan Lifestyle. So here we go:

INGREDIENTS

Chocolate ice cream
– Frozen bananas
– Dates
– Raw cocoa powder
– Carob

Raspberry ice cream
– Frozen bananas
– Frozen raspberries
– Dates

Topping
– Raw cacao nibs

Put your frozen bananas in your food processor. Works as well with your mixer but we found it easier in a food processor. Add the rest of the ingredients and let it go until it is nice and creamy. Put it in your bowl and sprinkle some raw cacao nibs on the top. Voilá – your evening is saved! 😉

Fancy some homemade Raw Chocolate?

Donnot stress about the pic above if you feel you are not there but try to keep it in mind. To make conscious decisions and choices are the best you can do right now. The only one we should “compete” with is ourselves. Never ever compare ourselves with anyone else. As soon as we are thinking and paying too much attention on someone else – we loose the contact with our own inner being. With that said, we donnot think it is bad at all to be inspired by other people. The difference is to allow other people to make us feel good, not bad. We acknowledge their way of living and doing – we let their positive energy radiate to us. Let them give from their abundance – and we soak it all up. Let them empower ourselves. Never ever see other people´s way of living as a comparison with our own lives. We are all on different missions and have all different purposes here. Embrace YOUR uniqueness – and share your good vibes with the rest!

1365967338014We love to make our own raw chocolate. Not only is it super easy to make and tastes delish but you are also 100 % sure what your chocolate actually consists of. Your treats should only consist of good ingredients that should make you feel amazing. As always it is also best to keep it simple for your body with as few ingredients as possible for easy digestion. Very important by making your own chocolate you will probably in the end save money since it is much cheaper to bring your good choco vibes to the kitchen and create some yourself! We have so far not experimented that much with different raw chocolate creations but our dear friend Ragnhild is the raw chocolate queen so please check her blog for more recipes and inspirations.

But now let´s make some raw chocolate! For one little batch use the measurement we have written but keep them only as guidlines.

INGREDIENTS
– 4 big tbl coconut oil
– 1/2 cup raw cacao*
– 1/2 cup carob*
– 1 tbl agave
– Raw cacao nibs (optional)
– Goji berries (topping)

* We like to mix raw cacao with carob but it works absolutely perfectly without carob or why not do it only with carob. Play with what you have at home and it will most likely turn out delicious! 

Start with melting your coconut oil. When it is liquid add your raw cacao and carob together with agave. The more cacao you put the more delicious it will turn out! If you enjoy chocolate as much we do 😉 Go with the feeling while adding. Start with less and add more. Squeeze some agave in to get it a bit sweeter. The more you put the sweeter it will be. Pour it in to a form and sprinkle som raw cacao nibs over if you want to make it even more epic. Put the form in the fridge to chill for at least 20 min. If you are in a hurry you could put it in your freezer as well.

Take it and try to cut it as nicely you can. Before serving – sprinkle some goji berries on the top. Ready to be enjoyed!

Raw Chocolate Balls

The other day we prepared some Raw Chocolate Balls that we want to share with you today. They are super easy to make and every single ingredient is of course GOOD for you. Once again, healthy life is both delicious and fun! We think it is time to replace your old chocolate treats with these ones and you might ask yourself the same question we did. Why have we not thought about this before?! Keep in mind that you can put whatever you feel for or have at home in your raw balls. We have listed the ingredients we have used this time.

INGREDIENTS1366471318185
– 1 dl walnuts (soaked)
– 1 dl Almonds (soaked)
– 6 medjool dates
– 4 dried figs
– 2 table spoons dried raisins
– 2 table spoons dried cranberries
– 1/2 dl raw cacao
– 1/2 dl carob

Start with putting your dates, figs, raisins and cranberries in your food processor. Process it a couple of times til you get a nice yummie texture. Add your nuts together with raw cacao and carob. Process it until all the ingredients are well mixed.

Start rolling your paste and put them on a plate. Enjoy them with a nice cup of tea, nut milk or why not a glas of red wine! 😉

Almond pulp in creation!

In one of our earlier posts we showed you how easy it is to make your own almond milkNot talking about how cheap and delicious it is but also the fact that you are 100 % sure what it is you actually consume. We think it is also very harmonic to make our own “milk”. It is a good opportunity to relax and do nothing but feel good and send positive vibes to this very moment. We find it super relaxing. We have also realized it is so important to bring your love to the kitchen and have fun! Be excited for what you are feeding yourself with. Your temple definitely deserves it at least!

It is also the absolute best substitute to regular milk and it is beyond better in all aspects. Stop supporting the cruel diary industry and realize the cow milk is not ment to you but for its veal! Have you ever thought about that humans are the only species drinking some other beings milk..

In the previous post we told you that you should not throw away the almond pulp since you can make a nice little treat with it. There are of course many options what you could do out of your almond pulp but today we want to share with you what we did with our leftovers! So here we go time for some Choco Pulp Treat.

INGREDIENTS1366238510537
– 2 dl almond pulp
– 1 banana
– 6 medjool dates
– 1/2 dl raw cacao
– 1 tbl agave syrup
– A pinch of pink himalaya salt
– Raw cacao nibs (topping)
– Goji berries (topping)

Take your almond pulp and mix it with a banana and a couple of dates. The more dates the better! 😉 Add as much raw cacao you feel for. Squeeze a bit of agave so you get a nice sweet taste. We like to add a pinch of salt as well to balance the almond pulp. Mix it until you get a nice little mousse out of it.

You could also add an avocado to get a proper mousse but it will get much heavier if you do that. But it is always an option. 

Sprinkle some raw cacao nibs on the top. Serve it with berries! We only had goji at home but this one works perfectly with all kind of sweet berries.

Donnot use your body as a trash can to throw old way of eating and living in it. You deserve better and to feel amazing! Many times it can be a battle to win over old habits that we have had for years, if not a lifetime. But it is never too late to make a change in your life. We are so grateful we finally had enough and realized there is another way of living. We somehow had the feeling we could feel better and we let us be guided to this point where we are today. This is still the beginning of our journey and we are learning so much, every day. A lot thanks to YOU who are sharing your thoughts and ideas with us (so please continue!!!!). What we have come to realize is that we always can feel even better – we are here to thrive and feel light and energetic! Let the food fuel you and not comfort you. Let the food make you thrive and not want you to take a nap to be able to digest. Mother Nature somehow had it all planned for us before. There is an abundance of amazing food for us here. Wednesday night out with Live Music

Hello beautiful,

We had a little sleep in today. Usually we are early morning birds but last night we went out with our friends who are in town.. so we think we deserved to sleep a little longer! 😉  We had a very lovely day, up and running non-stop! Despite some productive working hours we made a raw food lunch yesterday for our friends and it turned out very tasty. We made raw taco with nut “meat” and raw sour cream – recipes will be up this weekend. We also made an improvised cake that turned out delicious. Recipe is below. In the evening we went to different bars and ended up at Buorbon Street with live music. The singer had such a personality that he turned it all out to a proper show! We enjoyed it a lot and we love to go to bars with live music.. specially if it is a good one! 😉

Something we have noticed now when we are very conscious with our bodies and minds – and how we treat ourselves, is how AMAZING our bodies work now when we pay close attention to all the signals we recieve all the time. For instance, yesterday the lunch was pretty big for what we are used to eat so in the evening we really craved to keep it simple. We had a massive orange juice for dinner each.. and seriously felt amazing and so vibrant afterwards! We were juice-high (if that even exists?! ;)) and our bodies were totally thriving. If you would have asked us a couple of months ago if we would replace our dinner for a juice we would have thought  you were crazy!!! We think it is so amazing how our bodies are constantly trying to tell us what it needs. Especially when we step outside our daily routines and habits and really start to pay attention and give the body what it truly wants and needs. What a difference in mood and energy we can experience!

1365670133033Now it is time to make Raspberry Coco Chocolate Mousse Cake! The pics do not make the cake look as good it actually tasted. It was truly DELICIOUS and we highly recommend it! And as always, every single ingredients is GOOD for you and will make you feel vibrant and happy.. as all the food we are eating should make us feel.

INGREDIENTS

Crust
– Nuts (we used a bag of mix nuts; brazil nuts, hazelnuts, almonds)
– Dates
– Dried figs
– Carob

Raspberry Coco
– Bananas
– Frozen raspberries
– Dates
– Coconut cream
– Crust (optional)
+ Banana

Chocolate Mousse
– 1 Avocado*
– 1 Banana*
– Raw cacao
– 1 tsp Agave syrup

* Depending how big you want to make the cake, adjust the amount of avocado and banana in your mousse. It is a good guidline that for each avocado use one banana.

Topping
– Fresh raspberries
– Raw cacao nibs

Start with making the crust by putting all the ingredients in your food processor and process it until you get a nice and super tasty crust. Divide it in to your form.

Now do your raspberry coco layer by putting all the ingredients in your mixer except the coconut cream. Mix until you get a nice creamy texture. We used frozen berries but as always take what you have at home. Pour it in a bowl. Melt a table spoon or two, depending how big cake you are making, of your coconut cream. Pour it into your cream and stir around with a spoon. Now chop a banana and add it in the cream and stir carefully around with a spoon. Pour it into your form. Put it in the freezer meanwhile you prepare the chocoloate mousse.

Put all the ingredients for the chocolate mousse in your food processor. Add as much raw cacao you want – the more you put the more delicious it will be! 😉 Mix until you get your perfect mousse (waaaay better than all fake and unhealthy ones) and add it on the raspberry coco layer.

Let the cake be in the freezer for an hour to chill. You can leave it there as well if you want to save it for later. Take the cake out a good while before and keep it in the fridge so it is perfectly creamy when you serve it! Top it with fresh berries and some raw cacao nibs to make it even more tasty.

This Friday afternoon and as perfect weekend preparations we want to share a delicious raw chocolate mousse cake with a coconut twist with you! This one is super easy to make and will make your taste buds go bananas 😉 The cake is clean (of course) and every single ingredient is doing wonders for your body. Seriously, it cannot be more fun and delicious to be a health nut! Do you not agree? 🙂 The recipe is inspired by amazing Brenda with an amazing instagram (onehungrymami).

Ok. Let´s make this cake to celebrate this perfect day!

INGREDIENTS

Crust
– 1/4 cup Walnuts
– 7 Dates
–  2 big tsp Carob 

Chocolate mousse
– 2 Bananas
– 2 Avocados
– 1/4 cup Raw cacao
– 1-2 tsp Agave syrup
– Vanilla powder

Banana coco 
– 2 bananas
– 4 tbs coconut cream

This time we wrote some meassurement and proportions but please use them only as guidlines depending how big you want your cake and the size of your ingredients. This cake is a pretty small one and would go for 3 people, depending how big appetite you have of course! 😉

Start with making your crust by simply put all the ingredients in your food processor.1365087047503

Make your chocolate mousse by putting the ingredients in your food processor. Mix until it is smooth and no chunks in it. Take half of the mousse and cover the crust. Place the other half in an other bowl meanwhile.We love carob and think it gives a nice touch together with raw cacao but if you donnot have it at home, feel free the replace it with raw cacao instead.

Wash your food processor. Add your ingredients for the banana coco and process until smooth. Cover gently the chocolate mousse with your banana coco cream. Do it carefully.

Now take the rest of your chocolate mousse and cover your banana coco cream layer. Put it in your freezer and let it sit for an hour or more, depending on how big your form is. Take it out a good while before serving. Enjoy it with berries – bon appetite!!!
